There is no secret that breakfast is considered to be the most important meal of the day. Not only does it fill you up at the beginning of the day, making you feel full and satisfied; you can also suppress overeating and cravings by not skipping breakfast. When you are looking to eat a bit healthier in the morning, you may want to consider choosing a low carb breakfast option. Below are a few low carb suggestions to get you going soon after you rise for the day:

 

Breakfast Burrito Low Carb Recipe

 

This recipe makes 2 servings, containing 6 grams of carbs per serving.

 

Ingredients
1/4 cup mushrooms
1/4 cup zucchini
1/3 cup tomato
1 clove garlic
2 eggs
Dash cayenne pepper
Dash chili powder
2 Tbsp salsa
2 low carb tortilla shells
Mexican cheese blend

 

Directions

1) Dice the mushrooms, zucchini and tomato.

2) Finely chop the garlic.

3) Mix all in with the eggs.

4) Mix in pepper and chili powder.

5) Cook in frying pan over medium heat, stirring occasionally, until scrambled.

6) Lay out the low carb tortillas and lay half of the cooked egg mixture in each.

7) Add the salsa on top and roll each tortilla into a burrito.

8) Sprinkle cheese on top.

Sherrie's Breakfast Cereal

 

Ingredients

3 cups shredded unsweetened Coconut

3 cups chopped Walnuts

3 cups Textured Vegetable Protein TVP Bob's Red Mills brand

2 tbsp cinnamon

4 tbsp Splenda

 

Directions

1) Mix all ingredients together and stir well.

2) Pour 1/3 of the mix onto cookie sheet.

3) Bake for about 10 minutes at 350 or until light golden brown. 

4) Remove and cool in plastic container.

5) Store after cool in a sealed zip lock.

 

Icing for Waffles

(Only 2 grams per serving)

 

Ingredients

2 tbsp Powdered Maltitol (Steele's Brand)
1 tbsp cream cheese
1/2 tsp butter
1 tsp water

1 tsp melted butter
Cinnamon

 

Directions

1) Beat cream cheese, Powdered Maltitol, water, and 1/2 tsp butter with mixer until blended smooth. 

2) Toast 2 waffles.

3) Drizzle 1/2 tsp butter, 1/2 of the icing, and small amount of cinnamon on the first waffle. 

4) Repeat step with remaining ingredients onto the second waffle. 

Since you don't digest Maltitol there is nothing to count.  

 

Canadian Bacon, Egg & Cheese Croissantwich

 

There are about 3 carbs per sandwich, including the roll

Ingredients
1 New Revolution Atkins roll, sliced in half
2 slices of Canadian Bacon lightly fried
1 egg fried, break the yolk and spread it around a bit
1 slice of American cheese

 

Directions

1) Fry an egg.

2) When the egg is completed, place a slice of American cheese on it.

3) Follow with the Canadian Bacon on top of the cheese slice.

4) Slide the stack onto the bottom of the roll.

 

Atkins Revolution Rolls

 

This recipe makes 12 rolls, which contain 1 carb per roll.

 

Ingredients

6 large eggs, separate whites from the yolks (save the yolks!)
1 teaspoon cream of tartar
1 tsp splenda
1 tsp salt
2 Tablespoons Atkins baking mix
1/2 cup cottage cheese
1/3 cup shredded cheese (optional)

 

Directions

1)Pre-heat oven to 350 degrees.

2) With an electric mixer beat egg whites for about 30 seconds until slightly “frothy.”

3) Stop mixer and add cream of tartar.

4) Mix on high until egg whites are VERY stiff. It should be difficult to sling a bit off of your finger.

5) In a separate bowl, mix yolks, cottage cheese, Splenda, Salt, and Akins mix and mix well.
6)Add cheese to the yolk mixture if you want cheesy bread.

7)Add the egg yolk mixture to the whipped egg whites, gently pouring it over the whole top of the egg whites.

8) With a spatula, gently cut down through the egg white mixture and lift the bottom contents to the top.
Keep in mind that if you go fast or heavy handed, your bread won't stay puffed after cooling.

9) Drop onto parchment paper and bake until golden brown.

10) Place them on a cookie sheet right out of the oven.

11) Once they have cooled, store them in a zip lock bag leaving the bag open.

 

Low-Carb Strawberry Smoothie
(Makes One Serving)

Ingredients

1 cup frozen strawberries

1/4 cup soft tofu

1 cup milk

1 teaspoon Splenda

1 20-gram scoop of low-carb soy powder

 

Directions

1) Add all ingredients to a blender and mix.


 

Low Carb Breakfast Casserole

 

Ingredients

1/2 lb. sausage

1/2 c. chopped onion

1/2 tsp. salt

1/4 tsp. garlic powder

12 eggs

1/4 c. chopped green pepper

1/4 tsp. pepper

1/2 c. shredded cheddar cheese

 

Directions

1) Brown sausage.

2) Beat eggs and add other ingredients to eggs.

3) Mix in sausage and cheese.

4) Spoon into a casserole dish or muffin cups.

5) Bake at 350 degrees until a knife inserted in the center comes out clean.
