Sugar Free French Vanilla Ice Cream

This recipe contains 49 calories per serving.

 

Ingredients

1 cup Splenda sugar substitute

4 ½ cups fat-free half-and-half

2 tablespoons vanilla

3 eggs

 

Directions

1) Mix all thoroughly in a sauce pan.

2) Cook in a saucepan over low heat, stirring regularly until it thickens

3) Cook 15-20 minutes or until medium thick.

4) Transfer custard to a bowl and refrigerate for at least an hour or until it is completely cooled.

5) Put custard in your ice cream maker and follow the manufacturer's instructions.

6) If you use the packet Splenda instead of the pourable Splenda, make sure to cut back some because they are sweeter than the bulk.

 

Le Loup Blanc

This recipes means White Wolf, which is pear purée topped with whipped cream.

 

Ingredients

4 pears, peeled, quartered and cored

3-4 Tablespoons Splenda

1 Tablespoon vanilla extract

2 egg whites

1/4 pint whipping cream, whipped

 

Directions

1) Put the pears into a saucepan with a little water, 1 tablespoon of vanilla extract and 2 TBS of Splenda.
2) Cover and simmer gently for about 10 minutes until soft.
3) Drain well and purée them, taste and if necessary stir in more sugar.

4) Half fill 4 glasses or dishes. When cold, cover and refrigerate.

5)  Beat egg whites until stiff and stir into the whipped cream.

 

To Serve: Cover the pear puree with whipped cream and refrigerate for 15 minutes before serving.

 

Sugar Free French Fudge

 

Ingredients

1 can Skim evaporated milk

2 tablespoons Cornstarch

1 tablespoon Liquid sugar replacement

1/2 cup chocolate chips

3 ounces cream cheese -- softened

1 1/2 teaspoon vanilla extract

 

Directions

1) Combine evaporated milk, cornstarch, sugar replacement and chocolate chips in saucepan.

2) Cook and stir mixture is thick and chocolate chips are melted.

3) Whip cream cheese until light and fluffy.

4) Beat into chocolate/mixture.

5) Stir in vanilla extract.

6) Turn into buttered 8-in square baking dish.

7) Chill until firm.

8) Cut into 1-in squares.

9) Store in refrigerator.
